The Best Blueberry Pie

Hello friends! How are you? If you’re like me…you’ve been spending lots more time in your kitchen….cooking and baking during this covid season. Today, I thought it would be fun to break out of my decor box and share with you one of my all time favorite dessert recipes…BLUEBERRY PIE!

Let me tell you….this blueberry pie is so fresh and delicious. I know you’re going to love it!! The best thing about this pie is that it has very little sugar in it and the blueberries are fresh (not mushy). The other reason why I love this recipe is that it’s EASY! It’s perfect for those late summer dinner gatherings with friends.

You will need 7 cups of blueberries and a baked pie shell (I like to use the Immaculate pie shells because there are no artificial ingredients in them but any pie shell will work.)

Bake your pie shell according to the package label and let it cool while you’re putting the rest of the pie together.

Directions:

Combine:

3/4 c. sugar

1/4 t. Salt

2 1/2 T. cornstarch

2/3 c. water

1 c. blueberries

Mix these ingredients in a saucepan until the mixture is thickened then take off of heat and add:

2 T. butter

2 T. lemon juice

Fold in 5-6 cups of fresh blueberries

and place in baked pie crust. Refrigerate for 3-4 hours and top with whipped cream.

That’s it! SO delicious and SO easy!
