The Best Southwestern Breakfast Burritos

Here’s one of my favorite recipes for breakfast burritos with a bit of a spicy twist. I call these my Best Southwestern Breakfast Burritos and they’re made with eggs, black beans, veggies and my favorite secret ingredient…Dash Southwest Chipotle Seasoning!

I love this seasoning because it is salt free with no MSG - allowing flavors to pop without the extras!

Today I’m serving these burritos as the main dish at a brunch (plated with sour cream and avocados on the side) but these would also be good wrapped up in foil for a “grab and go” breakfast or lunch.

You can even be creative with the ingredients you use in them…substituting the veggies for ones of your preference or adding sausage or any other meat of your choosing.

The Best Southwestern Breakfast Burritos

2 T Olive Oil

1 Red Pepper (chopped)

1 Red Onion (chopped)

1 Garlic clove (chopped)

Dash Seasoning (Southwest Chipotle Blend) - 1 t

8 Eggs

1/2 c. Milk

1/3 c. Salsa (whatever kind you prefer)

Hot Sauce

1 c. Cheddar Cheese

1 can Black Beans (drained 14.5 oz)

Flour Tortillas (burrito size)

Instructions:

  1. In a large pan, heat olive oil over medium heat. Add red pepper, onion and garlic. Sprinkle in Dash Seasoning (I use approx. 1 t. but you can use more or less). Stir and cook for 5 min until the vegetables are softened.

  2. In a large bowl, combine eggs, milk, salsa and hot sauce along with a pinch of salt and pepper.

  3. Add the egg mixture to the vegetables in the skillet. Cook, stirring constantly until the eggs have cooked through - about 5 minutes.

  4. Add the cheddar cheese and the black beans and cook 2 more minutes.

  5. Remove egg mixture from heat and let cool slightly.

  6. Once eggs have cooked, place a tortilla on a clean, dry surface. Add 1/2 cup of the egg mixture to the center of the tortilla. Starting from the bottom, fold the tortilla up and over the eggs, tucking the sides of the tortilla as you roll.

  7. Place the burrito in a pan (lightly spray with olive oil) - seam side down. Sprinkle extra cheddar cheese on the burrito.

  8. Place in 400 degree oven for 10 minutes.

  9. Serve with sour cream, avacados, salsa and ENJOY!
